What Is Demerara Sugar? A Simple Guide to the Original

Demerara is a style of minimally processed raw cane sugar, named after the region in Guyana where it comes from.

Ours is single-estate, made the traditional way, all natural, and of course from Guyana. That is why we call it the original Demerara. Unlike champagne, Demerara is not a protected origin, so a lot of what is sold as Demerara is not actually from Guyana.

What makes it special is the taste. The sugarcane, the water, the climate, and the traditional method give it a flavor that is deep and nutty, with a little acidity and rich caramel tones. It is perfect for coffee, cocktails, and desserts, and it brings balance to your dishes. That is RARA Demerara.

What is demerara sugar?

Demerara is a minimally processed raw cane sugar named after the Demerara region of Guyana. It has medium-sized crystals and a natural caramel flavor because the natural molasses stays in the sugar.

What does demerara sugar taste like?

Deep and nutty, with a little acidity and rich caramel tones. That flavor comes from the sugarcane, the water, the climate, and the traditional method used to make it.

Why is single-estate demerara different from regular raw sugar?

Single-estate means it all comes from one place, one estate in Guyana, rather than blended sugar from many sources. Because Demerara is not a protected origin, much of what is labeled Demerara is not from Guyana at all. Ours is, and that origin is where the flavor comes from.

Demerara sugar vs brown sugar, are they the same?

No. Brown sugar is usually white sugar with molasses added back in. With Demerara, the natural molasses stays in the sugar through the traditional method, so the flavor is part of the sugar itself.

What is the best sugar for coffee?

Demerara is a great choice for coffee. The medium crystals dissolve well and the caramel notes add depth without tasting like plain sweetness. It works beautifully in hot coffee, cold brew, and matcha.

What sugar do baristas use?

Many specialty coffee people reach for Demerara because its caramel character complements coffee and cold foam rather than just sweetening it. That is a big part of why RARA Demerara comes in a shake tube, made to finish a cup at the table.
